As you can see it was a nice day for catching grouper here in Ft Lauderdale, Florida.
Most people don't really want to fillet the fish and that is probably because they were never shown how to properly fillet a fish.
Here you can see each step so you can do it yourself with no problem.
Once you get back to the dock you can wash and fillet your fish. Always keep the fish on ice to keep it fresh. It is very important to keep it iced because of the hot weather here in Florida.
First wash the grouper until it feels fresh and clean. Then make a cut just behind the fin.
Slice along the backbone of the fish to the tail. The bones of the rib cage will be left on the meat. Turn the fillet over skin down then start from the tail and fillet towards the head to remove the skin. Then turn the fillet over and cut down the center to remove the bones along the blood line.
