How to fillet Tuna


This is the hardest fighting fish pound for pound in the ocean. Tuna usually swims away from you and down toward the bottom of the ocean again and again.

When it begins to tire it circles around the boat. It's final fight is straight down in a small circle. You can feel the rod pumping up and down as you continue the fight to the boat. My favorite meal of tuna is blackened.

* Make a cut just behind the fin

* Slice along the backbone of the fish to the tail

* The bones of the rib cage will be left on the meat

* Turn the fillet over skin down then start from the tail and fillet towards the head to remove the skin

* Then turn the fillet over and cut down the center to remove the bones along the blood line

* Wash and chill the filleted fish
