Stuffed Portabella
with Yellowtail Snapper


This is a very elegant dish that is sure to impress your friends. It doesn't take long to prepare so it is great for entertaining. Serve with a salad or your favorite vegtables.




Ingredients

1 lb Yellowtail Snapper
4 large Portabella Mushrooms
1 sm chopped onion
3 cloves crushed garlic
Italian Bread Crumbs
1 egg
butter
Shredded Mozarella Cheese
Salt & Pepper





Wash the mushrooms and remove the stems. Place the mushrooms in a baking dish with butter on top and bake in the oven at 350 degrees for about 20 minutes.

Saute' the chopped mushroom stems, onion and garlic with butter until tender. Remove from the skillet and set aside. Dip the Yellowtail Snapper in egg then cover with Italian Bread crumbs. Cook in skillet with butter until golden brown. Add Salt & Pepper as desired.

In a small mixing bowl combine the Yellowtail Snapper, the sauted mushroom mixture and mozarella cheese (as much as desired). Take the mushrooms out of the oven and add the fish mixture. Top with more mozarella cheese and bake until the cheese has melted.
